The Wait is Over, Happy Buddha’s Asian Cuisine Opens for Business Tuesday
After more than a month of construction delays, Happy Buddha’s Chinese Cuisine is set to open this Tuesday, November 21st. While initially hoping to open in September, owners Jacob Betsworth and John Stevens are excited that opening day is here. “This is the most exciting project I have ever done,” said Betsworth. “It’s been a lifelong dream to cook and share my love of food with others.”
The Buddha Boys discussed their frustrations with the nearly two months of delays. Stevens said, “The delays have been very challenging because most things were out of our hands… things we couldn’t control, like on the construction side.”
“Waiting for materials and pushed back timelines caused several delays,” Betsworth added. “It has been extremely challenging.”
Starting this Tuesday, Happy Buddhas will be open six days a week, from Tuesday through Sunday. They will open each day at 11am and close at 9pm. They have their own delivery team and will deliver anywhere in Bellevue and most of Papillion’s eastern side. They will be closed this Thursday for Thanksgiving.
Happy Buddha’s Asian Cuisine is located in the Twin Creek Plaza at 3608 Twin Creek Plaza, one bay over from the Hallmark Store and just east of Baker’s Supermarket.
The Happy Buddhas also talked about how excited they are to bring their menu to Bellevue. “I think people will love the food and customer service the most. We will have unique BBQ fusion dishes a few times a month. Brisket fried rice, Chinese smoked pork spare ribs, and pulled pork BBQ rice. Our new smoker is firing on all cylinders, and we can’t wait to bring unique dishes and loved classics to the community. John and I love to serve people, and we can’t wait to show the love back,” said Betsworth.
Stevens, former co-owner of the popular, award-winning restaurant Golden Bowl, added, “My excitement level is through the roof! We have the freedom to try and create new dishes for customers to try – and we have a lot of ideas for menu specials we think the community is going to love!”
